YUM-O!!

I love broccoli cheese soup, and have been trying recipes to find the perfect homemade recipe, with no success...until today! My friend, Crystal, at work gave me her dad's recipe, and I gotta say, folks, it is pretty darn good! In the words of Rachel Ray, YUM-O!! I added cauliflower also, just to see what it tastes like. Enjoy!




Recipe:
3 Tbl. Butter (I used extra virgin olive oil)
1/4 c onion chopped
Saute

Add:
1 can cream of celery (15 oz)
1 can chicken broth (15 oz)
1 c milk
1 lb velveeta
1 lb broccoli steamed (make sure you remember to steam, i forgot, and it was a little crunchy)

Cook on LOW until cheese is melted. If it is too high, the cheese will start to separate.

Oh man, that looks really good! I wonder if that has too much sodium for me... :(

maybe you could use low sodium stuff?
